A white balsamic condiment infused with white truffle (Tuber magnatum) — the rarest and most prized of the Italian truffles. Limpid and clear-white in the glass, with a density of 1.22 and an acidity of 4-5%, round and full on the nose, soft and harmoniously sweet-sour on the palate. The unmistakable earthy aromatic of white truffle threaded through the sweet-acid balance of the Prelibato white condiment.

Acetaia Malpighi builds this dressing on the same foundation as their Prelibato range: acetified white grape must, matured in Italian ash-wood barrels. To it is added a white truffle infusion — a slow steeping of fresh truffle in the base — and a touch of natural truffle aroma. The result is crystal-clear in colour but complex on the palate: the white condiment carries the truffle without obscuring it. 100% natural — no caramel, no preservatives, no colourings, no additives.

White truffle is among the most prized and least forgiving ingredients in Italian cooking. It is destroyed by heat, easily overwhelmed by stronger flavours, and works best when added at the very end on simple, delicate preparations. Malpighi-recommended pairings include tagliolini or fettuccine with butter and Parmigiano, linguine with shellfish, Fassona beef tartare, pumpkin or ricotta tortelli, anchovies and bagna cauda, and veal cutlets. Acetaia Malpighi has worked balsamic in Modena since 1850.

Tagliolini or fettuccine all'uovo with butter and Parmigiano — a few drops at the finish · linguine with shellfish (telline, vongole) · crustaceans and seafood carpaccio · Fassona beef tartare · pumpkin tortelli and ricotta-filled pasta · anchovies and bagna cauda · veal cutlets and white meats · simple risotti finished off the heat · soft-boiled eggs and fried eggs · delicate carpaccio of fish or white meat · always added at the end, never cooked, to preserve the truffle aromatic
