White Truffle Cream by Cortisana — a base of porcini mushrooms (Boletus edulis and related species) and olive oil, with white truffle (Tuber magnatum Pico) at 1%, salt and a touch of truffle flavouring. The aromatic of the rare white truffle is fragile and concentrated; here it is supported by the body of the porcini and stabilised with natural truffle flavouring. Pasteurised for shelf stability. 417 kcal per 100 g.

The Tuber magnatum Pico is the white truffle of Alba — among the most prized truffles in Italy, gathered between October and December across Piemonte and a few other regions. At 1% of the recipe it is a signature aromatic element, not the base; the body of the cream comes from Boletus edulis (porcini), the king of Italian mushrooms — earthy, meaty, deeply savoury. A natural truffle flavouring stabilises the white truffle's volatile aroma so it survives in the jar.

• Stirred into a finished risotto at the last moment, off the heat
• On a crostino with a drizzle of EVO and freshly cracked pepper
• Folded into soft scrambled eggs at the end of cooking
• Over gnocchi with grated Parmigiano
• As a finishing element on polenta

The cream is meant to be used a teaspoon at a time — the aromatic is concentrated.

After opening, keep refrigerated and consume within a few days for best aromatic experience.
