Slices of summer truffle (Tuber aestivum), dried and blended with salt in a jar with its own grinder cap. Grating at the table releases the aroma at the last moment, which is when truffle gives the most. The 15 g jar holds the equivalent of 28 g of fresh truffle.

Salt makes up 47% of the blend, so it seasons as it flavours: season the dish lightly first, then grind over eggs, tartare, red and white meat, fish, pasta or risotto. Made by Calugi in Castelfiorentino, in the Tuscan truffle country between Florence and Siena.
