A smooth velouté inspired by the Italian classic parmigiana di melanzane — aubergine, sun-ripened tomatoes, sweet peppers, potato, onion and Parmigiano Reggiano DOP (5.24%) cooked together with extra virgin olive oil and Mediterranean herbs. Ready to warm and serve. 44 kcal per 100 g.

Happy Mama makes this velouté in Cavriago, in the heart of Emilia-Romagna. Made with simple ingredients, no added preservatives, no artificial flavourings — every component is visible in the list. The Parmigiano Reggiano DOP, protected under EU Regulation 1107/96, gives the velouté its characteristic depth and umami. The vegetable broth (with celery, fennel, onion and 17% carrot) carries the soup; aubergine, tomato and red pepper give it body; a quiet touch of parsley, garlic, pepper, oregano and paprika finishes it.

You will need:
• 1 jar of Vellutata alla Parmigiana Happy Mama
• Slices of bread (to taste)
• Extra virgin olive oil
• Parmigiano Reggiano DOP flakes
• Black pepper (to taste)

Shake well before opening. Pour the velouté into a small pan and warm it gently for a few minutes. For a more satisfying meal, toast slices of bread on a hot pan with a drizzle of olive oil. Once the velouté is ready and the bread is golden, serve and enjoy — top with a few flakes of Parmigiano Reggiano and a turn of black pepper for an extra kick. Your meal is ready in just a few minutes.
