Bristot has been baking in San Gimignano — the hill town of towers between Florence and Siena — since 1957. This is the ox-eye cookie in its darker version: the same flower of shortcrust pastry with a window cut through the top, the fruit filling swapped for a cocoa and hazelnut cream.
The cream makes up 25% of the cookie, with hazelnuts at 8%, fat-reduced cocoa and cocoa butter — rich, glossy, more gianduia than chocolate bar. Underneath, the same Italian pasta frolla: wheat flour, sugar, eggs and honey, worked and filled by hand.
The one to reach for when the fruit version feels too polite. Espresso after dinner, a glass of cold milk, or the sweet note at the end of a cheese board. 200 g tray. Contains hazelnuts. Keep sealed in a cool, dry place.
