Bristot has been baking in San Gimignano — the hill town of towers between Florence and Siena — since 1957. The occhio di bue, "ox eye," is one of the oldest shapes in the Italian pastry shop: a flower of shortcrust pastry with a window cut clean through the top, and fruit glowing in the centre.
The tray carries two fillings, each making up 25% of the cookie. The cherry one is built on a cherry purée at 40%, rounded out with a red-fruit purée of elderberry; the apricot one on an apricot purée at 45%. Both sit on the same pasta frolla — wheat flour, sugar, eggs and honey — worked and filled by hand.
Crisp, only lightly sweet, and the cookie Italians dunk without apology into morning coffee. Serve at room temperature. 200 g tray. Keep sealed in a cool, dry place.
