Pecorino is one of the few Italian cheeses that stands up to truffle without disappearing behind it. Here sheep's milk pecorino makes up 55% of the cream, sharpened with pepper and finished with summer truffle (Tuber aestivum) at 0.3%.
The texture is smooth enough to melt straight into hot pasta and firm enough to spread on crostini, and it also works as a filling for savoury tarts. Ready to use, no cooking needed. Gluten free. Contains milk. Made by Calugi in Castelfiorentino, in the Tuscan truffle country between Florence and Siena.
