A naturally leavened panettone with a salted pistachio filling at 18% of the cake, made with Pistacchio Verde di Bronte PDO paste at 25% of the filling, plus dark chocolate chips at 13% — cocoa 48% minimum. The salt is deliberate: it cuts the sweetness of the dough and keeps the pistachio from turning cloying.
One kilogram, roughly twelve slices of 80 g. Seven months of shelf life in the sealed box. Alcohol content 0.40%.
