An exclusive selection from the Malpighi attic — Aceto Balsamico Tradizionale di Modena DOP Extra Vecchio, aged inside antique juniper-wood barrels that give the vinegar a pronounced, spicy aromaticity unlike any other in the range. Density 1.36, acidity 5-6%. Limpid, dark and lustrous brown in the glass, with a resinous, aromatic depth on the nose and a long, dense, woody finish.

The "Ginepro" designation refers to the barrels. The vinegar inside is an Extra Vecchio DOP — at least twenty-five years old, in compliance with Regulation EC 813/2000 — but the final long ageing has taken place in old juniper-wood casks, which the Malpighi notes describe as having a strong, penetrating aromatic essence. Among the six woods of the traditional Modenese batteria (chestnut, cherry, juniper, mulberry, oak, acacia), juniper is the one that gives the most recognisable fragrance: where chestnut gives colour from its tannins, where cherry gives soft and persistent perfumes, juniper carries through a distinctly spicy note. 100% natural — no caramel, no colourings, no additives.

Acetaia Malpighi has been tending its barrels since 1850, five generations of one Modenese family watching over more than 3,500 casks. The 100 ml bottle is the official Giugiaro design for the DOP, presented in an elegant wooden case with a satin interior, with a TIC dosing cap and a recipe booklet. Strictly uncooked, in drops from a porcelain or plastic spoon — never aluminium. Best enjoyed neat as a digestivo, or in drops on slivers of well-aged Parmigiano, on game and red meats where the spicy-balsamic note finds its perfect match, on dark chocolate, on artisan vanilla ice cream, on strong aged cheeses.
