Orange Balsamic Dressing - Orange Juice & White Grape Must

The Malpighi white condiment meets the juice of oranges. A bright, fruity dressing — limpid and luminous in the glass, golden-orange in colour, round and full on the nose, decisive and rounded on the palate with a clear note of orange. Density 1.30 — syrupy and concentrated, despite being a young condiment.

Acetaia Malpighi has worked balsamic in Modena since 1850. This Orange Dressing is something else: a deliberate step sideways from the dark, concentrated tradition into something fresh and citrus-led. The base is the same acetified white grape must of the Prelibato range; the orange juice is added in concentrated form, with a touch of natural orange extract for aroma, and the result is a condiment that opens an entirely different register at the table.

Used in drops on fresh and aged cheeses, on every kind of fish and shellfish, on fresh fruit and on cream-based ice cream. Sparing a few drops on a Caprese with buffalo mozzarella and San Marzano tomatoes is a Malpighi-recommended pairing. The house also designs cocktail recipes around it.
