Italian grilled peppers — red and yellow — sliced and preserved in olive oil with garlic, wine vinegar, sugar and a touch of extra virgin olive oil. Made by TAB Green Line in Genola, in the Piemonte countryside, under the Cortisana brand. 280g format. 55% pepper content — a generous ratio for a jar of this kind.

Cortisana is a line of preserved Italian vegetables and antipasti — authentic Italian flavours brought into the jar without complications. The peppers are halved, grilled, then sealed in olive oil with garlic and a measured acidity regulator (citric acid E330). The product is pasteurised; the result is a crunchy, sweet-and-smoky bell pepper with the colour holding stable through the 36-month shelf life.

How to use them.

Drain the peppers briefly to remove excess oil. The packing oil is flavoured by the peppers and garlic — excellent on bread or for dressing pasta or salads.

To serve as antipasto:
• Drain a generous portion (red and yellow, for colour)
• Arrange on a small plate at room temperature
• Pair with bread and a medium-bodied red wine — Dolcetto, Barbera, or Nero d'Avola

After opening, keep refrigerated and consume within 5–7 days. Always cover the remaining peppers with their oil before refrigerating.
