Pesto al Pistacchio is an uncooked sauce — adding heat dulls the pistachio's natural sweetness and aromatic.

To dress pasta:
• Cook your pasta al dente in well-salted water
• Drain, keeping a ladle of pasta water
• Off the heat, in a warm bowl, add 1–2 tablespoons of pesto per portion
• Stir gently with a splash of pasta water to loosen the emulsion
• Top with a few crushed pistachios and a turn of black pepper
• Serve immediately

A favourite combination: gnocchi with this pesto + a spoon of ricotta + a drizzle of EVO. Or even simpler: a crostino with burrata and a generous spoon of this pesto on top.
