The Prelibato, taken further. Eight years of slow ageing in barrels of Italian ash wood, against five for the standard Prelibato — same Trebbiano Modenese grapes, same approach, more time. Intense and full on the nose, velvety, soft and fruity on the palate, with a density of 1.30 — markedly denser than a young white condiment. A balsamic with the body of an aged product and the clarity of a young one.

The wood does the work that time alone cannot. Eight years in Frassino barrels concentrate the must, deepen its aroma and round its sweetness, with the grain of the wood quietly contributing its own character without ever changing the colour. The result is a balsamic that pours straw-yellow with golden highlights.

Acetaia Malpighi places this Riserva in their range of "light seasonings" — made for the moments when the dish needs depth without darkness: shellfish and crustaceans, caviar, fresh and mild aged cheeses, white meats, fresh fruit at the close of a meal.
