Bristot has been baking in San Gimignano — the hill town of towers between Florence and Siena — since 1957. Bauletti means "little trunks": golden parcels of Italian shortcrust pastry, folded closed around their filling before baking.
The filling is apricot at 25%, built on an apricot purée at 45% — sweet, faintly tart, never cloying, and the most classic of all the Italian pastry-shop fillings. The pasta frolla around it is wheat flour, sugar, eggs and honey, worked and filled by hand.
Dip them in coffee at breakfast, serve them at four o'clock with tea, or eat them straight from the tray, standing up, the way they are really eaten. 200 g tray. Keep sealed in a cool, dry place.
