Bristot has been baking in San Gimignano — the hill town of towers between Florence and Siena — since 1957. Bauletti means "little trunks": small parcels of Italian shortcrust pastry folded closed around their filling before they meet the oven.
Inside is a lemon cream at 25%, made with concentrated lemon — sharp and clean against the pastry, which is the classic pasta frolla of wheat flour, sugar, eggs and honey. Filled and folded by hand, one parcel at a time.
Serve at room temperature with tea, with a morning cappuccino, or with a small glass of Vin Santo at the end of a meal. 200 g tray. Keep sealed in a cool, dry place.
