Italian artichoke wedges preserved in olive oil with garlic, chilli pepper, wine vinegar, sugar and salt. Made by TAB Green Line in Genola, in the Piemonte countryside, under the Cortisana brand. 280g format. 65% artichoke content, 34% olive oil — a generous ratio.

Cortisana is a line of preserved Italian vegetables and antipasti — authentic Italian flavours brought into the jar without complications. The artichokes are cleaned, cut into wedges, then sealed in olive oil with garlic, chilli pepper, wine vinegar, sugar and salt. The product is pasteurised; the result is a crunchy, vibrant artichoke wedge with light green colour, carrying a quiet warmth from the chilli.

How to use them.

Drain the artichokes briefly to remove excess oil. The packing oil is flavoured by the artichokes, garlic and chilli — excellent on bread or for dressing pasta or salads.

To serve as antipasto:
• Drain 4–6 wedges per portion
• Arrange on a small plate at room temperature
• Pair with bread and a glass of light white wine — Vermentino, Falanghina, or Sauvignon Blanc

After opening, keep refrigerated and consume within 5–7 days. Always cover the remaining artichokes with their oil before refrigerating.
