Slices of summer truffle preserved in extra virgin olive oil by Cortisana — Tuber aestivum Vitt. at 60%, extra virgin olive oil at 38%, salt and a touch of truffle flavouring. The summer truffle is gathered between spring and autumn across the Italian centre-north. Pasteurised for shelf stability. The Tuber aestivum (also known as scorzone — "rind" in Italian, for its rough exterior) is the most common of the Italian black truffles. Less intense than the winter melanosporum and far less rare than the white magnatum of Alba, but it carries the unmistakable woodland, earthy aromatic that defines truffle cooking. The slices in this jar are firm and delicate at once. The added flavouring intensifies and stabilises the natural aroma, which is fragile by nature. The oil around the slices absorbs the truffle character and becomes a finishing oil in its own right.

How to use it

The aromatic of summer truffle is fragile: it carries through heat momentarily, then dissipates. Always add the truffle at the very end, off the heat.

Quick uses:
• Fresh tagliatelle with butter, Parmigiano and 3–4 slices laid on top at the moment of serving
• Soft scrambled eggs finished with 2–3 slices off the heat
• Risotto bianco with butter and a generous spoon of slices stirred in off the heat
• Bruschetta with warm ricotta and a few slices
• A spoon of slices over a beef carpaccio or a fish tartare
• On hot pizza straight from the oven

Don't forget the oil — it has fully absorbed the truffle aromatic and works as a finishing oil on cheese, salads, grilled vegetables, or to dress a steak.

After opening, keep refrigerated. The flavour of summer truffle dissipates quickly after opening — consume within a week for best aromatic experience.
