Tartufata by Cortisana — a classic Italian mushroom cream with a touch of summer truffle. Cultivated mushrooms (Agaricus bisporus) base, extra virgin olive oil, summer truffle (Tuber aestivum Vitt.) at 3%, salt, parsley, garlic and a touch of truffle flavouring. The Tartufata is the workhorse of the Italian truffle kitchen — the jar that lives in the pantry and gets reached for several times a week. Pasteurised for shelf stability. 266 kcal per 100 g.

The Tuber aestivum (scorzone) is the most common Italian black truffle, gathered between spring and autumn across the centre-north. At 3% it gives the cream a real woodland note, supported by a touch of natural truffle flavouring that stabilises the aroma in the jar. The body of the cream comes from Agaricus bisporus (champignon mushrooms) — the most cultivated mushroom in the world, mild and creamy, that lets the truffle aromatic come through. Parsley and garlic add a lively herbal lift typical of the Italian recipe.

Tartufata is at its best as a finishing element — never cooked at length, the truffle aromatic dissipates with sustained heat.

Quick uses:
• 1–2 teaspoons on a warm crostino with a drizzle of EVO
• Tossed with pasta loosened with cooking water and a knob of butter, off the heat
• Stirred into a finished risotto at the last moment, off the heat
• Folded into soft scrambled eggs at the end of cooking
• On pizza bianca straight from the oven
• As a sauce base for chicken, veal, or polenta

The cream is meant to be used a teaspoon at a time — the aromatic is concentrated.

After opening, keep refrigerated and consume within a few days for best aromatic experience.
