Happy Mama makes this velouté in Cavriago, in the heart of Emilia-Romagna. Made with simple ingredients, no added preservatives, no artificial flavourings — every component is visible in the list. Tomato is the base, sweet and lightly acidic; potato gives body without weight; extra virgin olive oil rounds the structure; basil and garlic finish it with a fresh, herbal Mediterranean character.

You will need:
• 1 jar of Vellutata di Pomodoro Happy Mama
• Slices of bread (to taste)
• Extra virgin olive oil
• Fresh basil leaves (to taste)
• Black pepper (to taste)

Shake well before opening. Pour the velouté into a small pan and warm gently for a few minutes. For a more satisfying meal, toast slices of bread on a hot pan with a drizzle of olive oil. Once ready, serve with a drizzle of EVO, torn fresh basil leaves and a turn of black pepper. For shakshuka, simply heat the velouté in a pan and crack one or two eggs directly into it, cover, and cook gently until the whites are set. A meal in minutes.
