Mamma mia! Fragole e Fragoline - Sicilian Strawberry & Wild Strawberry Extra Jam

Two strawberries in one jar. The cultivated fruit builds the body — 110 g of fruit for every 100 g of product — while a smaller share of wild strawberries carries the aroma, which is more intense and less sugary than its garden cousin. Cooked at low temperature under vacuum, so the colour stays red rather than turning brown.

Classic on bread and butter, but it earns its place with fresh cheese and with yogurt, and as a filling for tarts and crostate where a flatter jam would disappear under the pastry.
