Size

Sheep's milk cheese in the tradition of Pienza, the medieval hill town in the heart of Tuscany. The milk is drawn from flocks grazing in the area of Pienza, and the cheese is made by Caseificio Maremma in Follonica, a family caseificio operating across the southern Tuscan lands.

The recipe is honest and Tuscan: pasteurised sheep's milk from Pienza, sea salt from Volterra — an inland Tuscan salt with centuries of culinary use — calf rennet, and traditional dairy cultures. The aged paste is semi-firm, sweet, and richly aromatic, with the herbal complexity of Tuscan pastures.

Best at room temperature to release the aroma. On a cheese board with fresh pears and chestnut honey, or grated over fresh pasta. The rind is not edible. Once cut, wrap and refrigerate.
