Bold by name, sweetly spicy by character. L'Ardito by Rocca Toscana Formaggi brings minced chilli pepper directly into the paste of a Tuscan sheep's milk pecorino — used at 0.5%, present but never overwhelming, where the natural mildness of the sheep's milk holds its ground against the heat rather than being swallowed by it.

Rocca Toscana Formaggi is based in Arezzo, in the heart of Tuscany, where the family has been making pecorino for generations. Their flavoured line is built on a clear philosophy: exceptional sheep's milk paired with select ingredients, where the addition serves the cheese rather than dominating it. L'Ardito — daring in name, dolcemente piccante in character — sits squarely in that tradition.

Best at room temperature to release the chilli's perfume. On a cheese board, with a glass of medium-bodied red wine. The rind is not edible. Once cut, wrap and keep refrigerated.
