Cipriani's Spaghetti, one of the most beloved of all pasta shapes, embody the essence of Italy's culinary heritage. Long and fine, drawn from the finest organic durum wheat semolina and made with care according to traditional methods, they represent pasta at its purest.

The word spaghetti comes from the Italian spaghetto, meaning "thin string" or "twine" — a fitting name for this slender shape. Made with organic durum wheat from Puglia and drawn slightly thicker for a satisfying, meaty bite, this is a classic from the Cipriani restaurant menu — superb with anything from a simple olive oil and chilli to a fuller sauce.

Cook in plenty of salted water (about 1 L per 100 g of pasta) at a rolling boil for 9-11 minutes. Drain al dente and toss in the pan with the sauce.
