Cipriani's Carnaroli rice, renowned for its exceptional quality, is a medium-grain rice prized for its high starch content — which gives it a robust texture that holds remarkably well through cooking. The grain is thicker and more elongated than most, retains its starch until the moment of mantecatura, and does not break down. Its colour tends towards cerulean.

Grown in Casalbeltrame, a small town in the province of Novara, Piedmont, Carnaroli is celebrated for its rare ability to absorb flavour while keeping a firm bite and a natural creaminess — the rice of choice for risotto and other refined dishes.

The cooking time is slightly shorter than usual, about 15 minutes. Carnaroli is especially suited to risotti with separate, well-defined grains (all'onda), as well as to rice salads.

Naturally gluten-free.

For risotto: toast the rice, then add hot stock a ladle at a time, stirring, for about 15 minutes until creamy but al dente. Also excellent for rice salads.
