Two of Tuscany's greatest expressions in a single cheese. Il Gioviale by Rocca Toscana Formaggi brings together pasteurised sheep's milk and Chianti DOCG wine added directly during the cheese-making process — at a minimum of 16% — producing an aromatic, deeply flavoured pecorino with a paste tinted purple-pink from the wine and a character as convivial as its name suggests.

In Tuscany, cheese and wine have shared the same table for centuries. The Chianti hills produce one of Italy's most renowned reds, structured and tied to the landscape between Florence and Siena. The same hills and the surrounding countryside yield sheep's milk of comparable quality. The encounter between the two, in Il Gioviale, is deliberate — a Tuscan idea given a single form.

Best at room temperature to release the aroma. On a cheese board, with cured meats and crusty bread, or alongside other aged cheeses. The rind is not edible. Once cut, wrap and keep refrigerated. Contains sulphites from the wine.
