Intense perfume, lingering aroma. Il Piacere by Rocca Toscana Formaggi brings black summer truffle (Tuber aestivum) directly into a Tuscan sheep's milk pecorino — used at 1.7% as a brisure preparation, of which 0.8% is the truffle itself. The paste is white and compact, visibly studded with dark truffle pieces.

Rocca Toscana Formaggi is based in Arezzo, in the heart of Tuscany, where the family has been making pecorino for generations. Their flavoured line is built on a clear philosophy: exceptional sheep's milk paired with select ingredients, where the addition serves the cheese rather than dominating it. The truffle here gives perfume and depth without overpowering the sheep's milk character.

Best at room temperature to release the truffle's perfume. On a cheese board, in a risotto, or shaved over fresh egg pasta. Pairs well with structured red wines. The rind is not edible. Once cut, wrap and keep refrigerated.
