Vacche Rosse Riserva - Aged Italian Cheese, Over 40 Months

The Riserva of the Antica Corte delle Vacche Rosse in Bibbiano, near Reggio Emilia. Aged for over 40 months — nearly four years in the maturing rooms — this is a small reserve carefully selected: only the most perfect wheels reach this stage. The cheese carries the "Vacche Rosse" brand registered in 1991, fire-marked directly onto each wheel during the long aging.

The Vacche Rosse — the Reggiana red cattle, an ancient native breed once on the brink of extinction — provide the milk, and the family of this caseificio has worked since the 1930s to recover and restore them. The cheese is made simply: milk, salt, and rennet. No lysozyme, no preservatives, no additives. Their work was recognised at the Italian Cheese Awards, where their aged cheese over 24 months was named best in its category.

Never sharp on the palate — always soft, intense, with a note of sweetness. At its finest in thin flakes at the end of a meal, paired with traditional balsamic vinegar aged 25 years, which draws out the full depth of aroma. Keep refrigerated between +2°C and +4°C; once cut, wrap and refrigerate.
