Linguine - Artisanal Egg Pasta from Le Marche

Two-and-a-half-millimetre strands, thin and golden — linguine the way egg pasta does them at their most elegant. A flat, narrow ribbon that finds an easy balance between structure and delicacy, equally at home with pesto, light seafood sauces, or a simple dressing of good oil and herbs.

Made in Monte San Giusto, in the Marche, by La Pasta di Aldo. The family has built its craft around the Aldo Method™ — their own process of bronze-die extrusion, gentle handling of the dough, and slow drying at low temperature on frames for as long as the sheet needs. No water added, no shortcuts. Time, here, is an ingredient.

The result is a strand of clean, present structure: firm under heat, smooth in the mouth, golden in the pan. It holds without softening, and carries a sauce with quiet elegance.
